Following the Thanksgiving feasting on comfort food…and leading into the Christmas season of sweets, treats and parties to attend, I am feeling the need to regroup a bit this week. So, after church today, I came home and threw my Christmas sleep pants and a big hoodie on, whipped up an omelet, tossed a chicken and squash in the oven to roast, and planned this week’s menu. The focus will be less carbs/less sugar…more protein, more fruits and veggies. Mixed greens and baggies of carrots, celery and peapods are already packed and tucked away in the fridge for lunches this week. The Cranberry-White Chocolate Cookies that I have been eating for breakfast have been stashed away in the freezer for a bit.
