It has been a chilly, but RELAXING long weekend…a MUCH needed rest before finishing the last few weeks of this school year. There have been naps…photo projects…movies…a trip to the farmer’s market…and exploring a couple of new restaurants.
Kudos to Colossal Cafe for an amazing Fried Egg sandwich…egg, fresh tomato and feta on toast…
Speaking of yummilicious breakfasts…I whipped up a little egg scramble this morn with sauteed onions, fresh asparagus, bacon, plenty of cheese (cheddar/monterey jack/parm) and topped with fresh tomatoes…AND last weekend there was French Toast with Coconut syrup, bananas and toasted coconut (adapted from Cooking à la Mode)…eaten from my new desk space looking out on the spring day.
Mother’s Day brought a surprise visit from my college girlie in the midst of her final exams…for a dinner of pulled pork tacos (my pal Judy’s recipe), southwest salad (adapted from Lauren’s Latest)…and creme brulee for dessert!
Last, but certainly not least, was the attempt at Grilled Pizza! Yummmo! Top that tasty hot pizza (choose your own toppings!) with greens for an even tastier treat.
