76 days of fab food

As summer approached, I felt the need to find a way to savor my luxurious vacation…with the potential to consider 76 days in a row of time off…I decided to log at least one fabulous food item for each day!  What a journey!  My days are complete and I have returned to the “Land of the Working!”

But it was a GREAT ride!  It helped me to be intentional about making the most of each moment.  So many people I know spend all year waiting for their “two weeks of vacation.”  And here I was with a full 76 continuous days of leisure.  When July 4th rolled around, friends I encountered made comments like…”Summer is going sooo fast!  It is nearly half over!”  I simply replied…”Actually I am only on day 20, which means that I still have 56 days left.”  🙂

As I planned menus, searched for recipes or perused new menus, I was reflective in thinking that it really needed to be fabulous!  I even found the joy in chocolate covered peanuts and pepperoni pizza!  Food symbolized the power to choose…to decide that today was another day to savor…another day to be happy to be alive…an opportunity to live the life that God has blessed me with.  So here it is…76 days of fab food…

Day 7 Marinated and grilled shrimp, wrapped in prosciutto

Day 8 Fried egg sandwich with cilantro, tomatoes and colby jack

Day 9 Buffalo Wings and Hawaiian Pizza

Day 10 Bowtie Pasta with Grilled chicken, asparagus, pistachios, mascarpone cheese

Day 11 Buttery popcorn

Day 12 Grilled BBQ Babyback Ribs

Day 13 Salami, Gouda Cheese and Baby Green Pea Pods

Day 14 Greek yogurt with granola, blueberries and banana

Day 15 Garlic roasted tortilla with fresh mozzarella, tomatoes and basil

Day 16 Chicken fajita quesadilla with sauteed shallots and orange baby pepper

Day 17 Penne with Grilled Chicken and Roasted Tomato Vinagrette

Day 18 Cinnamon bagel with honey walnut cream cheese

Day 19 Waffle with strawberries

Day 20 Great-Grandma’s hot fudge over vanilla ice cream with cashews

Day 21 Fresh green salad with grilled chicken, pears, pecans and blue cheese

Day 22 Asian noodle pasta with fresh corn from the cob and lima beans

Day 23 Panzanella cracker with Italian ground beef, pepperoni and shredded mozzarella

Day 24 Mediterranean tuna melt

Day 25 Baked Ricotta

Day 26 “Walking Taco”

Day 27 Spicy Asian Peanut Noodles with grilled chicken

Day 28 Blackened Shrimp with pomegranate citrus salsa

Day 29 Waffle Fries

Day 30 Scallops wrapped in bacon

Day 31 Lump Crab BLT with avocado

Day 32 Almond Macaroon

Day 33 Vanilla ice cream with homemade Raspberry sauce

  1. My dear sweet friend. What a wonderful task to have accomplished. You are so insightful. How I have enjoyed sharing a very small part of this journey with you. When I read your blogs I can actually feel your heart pouring out. It did my soul good to know you again. What a very blessed summer you gave to me. May God lead you as you touch new lives this school year and I am looking forward to our next adventure and 76 more days! Love you.
