Day two-school cancellation for cold temps. Moms all over town are going a little stir crazy with their kiddos running amuck indoors, playing endless video games and blasting Nerf N-Strike Elite Stockade Blasters. Not me. Savoring every. single. minute. of this lazy day. No make-up, ponytail, sweats, wool socks. It feels a bit like playing hooky. There was a four hour game of Scrabble yesterday. This morn I have a Sous Chef in the kitchen frying up sausage, a little coconut toasting on the stove, pancakes on the griddle and the sun is shining.
Snuggle in, stay warm, throw in another DVD in for the kids!
Old Fashioned Pancakes
(torn out of an old magazine-no credit to the original creator-sorry!)
- 1-1/2 cups flour
- 2 tablespoons sugar
- 1-1/4 cups milk
- 3 tablespoons melted butter
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 large egg
In a large mixing bowl, mix together the flour, baking powder, sugar and salt. Beat in eggs, milk and then add in the melted butter. Combine until the batter is smooth. Heat a lightly oiled griddle, over medium high heat. Ladle about 1/4 cup of batter onto the griddle for each pancake. Once the bubbles break on the surface of the pancake, flip with a spatula and cook for an additional minute. Serve with butter, toasted coconut, chopped pecans and warm maple syrup.
